Remember me?
It’s a typical Wednesday night over here. And yet again, I’ve found myself having gone another 2 days without posting. If only my life consisted only of waking up, writing a blog post about breakfast, working out, food shopping and then blogging about dinner….that would be wonderful. Anddd maybe a couple vacations each year to Europe and to lay on the beach in the Carribean or Pacific, I mean is that so much to ask??
The past few days have been kind of uneventful. Monday was an off day so I came right home after work. Jeff and I had an awesomely summerish dinner of fresh corn on the cob (from our farm stand trip on Sunday) grilled with a little olive oil and the husks on which was a nice touch. We ate that with the last of the frozen turkey burgers I had made a few weeks ago and some salad. No pics because I left my iphone which I take all my pictures on in my car and I was clearly too lazy to walk down the stairs and into the garage to fetch it. Fetch??
Tuesday, yesterday, I ate a new lunch! Well not new to me but new since starting this blog. Thin N Trim Turkey, tomatoes, spring mix, basil and mozzerella in a half of a Lavash wrap. No picture of this either because I clearly wolfed it at my desk :-/ sorryyyy. It was a nice shake up from my normal salad lunch routine, though.
After work I went to the gym and ran 3 miles in 28 minutes on the treadmill then did a few quick arm machines. I had a trip to Target or Walmart that I had been putting off for over 2 weeks that I neeeeded to finally make and didn’t want it to be 9:00 by the time I got home. So I left the gym and headed over to Target to make my purchases and browse the sundress selection. I was good and left with only the stuff I actually went in for, which sadly did not include sundresses.
I came home and had this salad:
Chicken, Olivia’s Spring Mix, cucumbers, tomato, green pepper, goat cheese and some hummus and half of a Lavash wrap on the side. Yum!
I have decided that although I’ve been really good lately about running 2-3 miles at least twice a week if not more than that, I really need to get into a more serious strength training routine, too. A few years ago, like in 2010, I did a once a week cardio kickboxing class which absolutely kicked my a$$. It was only 45 minutes once a week but apparently that’s all I needed. Even when I was in my top shape that class still killed me every week and I was painfully sore for days after, which I loved and hated all at the same time.
I miss it. I need that again. I need to stop being such a procrastinator and just show up to a class at my gym. This will be my goal for the next week.
Tonight, I probably would have gone to the gym again but my car desperately needed an oil change so I came straight home so Jeff AKA my mechanic could do it. I made dinner for us, which I was less than impressed with. I made a tofu stir fry but it just didnt come out great. I tried to bake the tofu but after 45 minutes it was still kind of soft and gelatinous, I sauteed the vegetables in coconut oil and tamari but they got overcooked and were sad looking. I also made quinoa which came out fine but really, the meal just wasnt one of the best. Wah. No pictures because they would have been ugly.
And such is my life. I’m going to go lay on the couch with Leon and watch Rick Steeve’s Europe and wait for my mechanic to return from rotating the tires on his car. I’ll let Rick transport me to a quaint Austrian village and watch him drink beer with some friendly locals. More fun and pics to come tomorrow and the next few days, promise :)
